Apple pie oats with cashew butter and oat milk

What you need
2 dl rolled oats
4 dl water
0,5 tsp salt
0,5 tsp cardamom, ground
2 apples (preferably sour ones like discovery or granny smith)
0,5 tbsp coconut oil
0,5 tsp cinnamon, ground
1 dl walnuts
0,5 tbsp honey (optional)
2 tbsp water
1 banana
1 tbsp cashew butter
2 dl oat milk
What to do
Combine oats, water, salt and cardamom in a saucepan, bring to the boil and simmer on low heat for 3-5 min while stirring.
Chop apples into 1 cm / 0,5 inch cubes. Heat coconut oil over medium heat in a frying pan and fry the apples until softened and lightly browned. Add cinnamon and continue frying for 1 min.
Chop the walnuts coarsely and add to the pan, roast together with the apples for 1 min. Then pour in the honey while stirring.
Pour the water over the apples and walnuts so a nice “apple and cinnamon syrup” is formed.
Top the oats with chopped banana, cinnamon apples, cashew butter and skimmed oat milk and serve ♡
